Tortilla Española (Spanish Omelet)

Ingredients

1 onion, chopped
4 eggs, beaten
10 oz (300 g) potatoes, peeled
¾ cup olive oil
2 tbsp flat leaf parsley chopped

 

Directions

1. Add the olive oil to a large skillet and set over medium heat. Cut the potatoes and add to the pan followed by the onions.
2. Partially cover the pan and cook for 25-30 minutes, stirring occasionally, until potatoes become tender.
3. In a small bowl, beat the eggs. Mix in the parsley, season with salt and pepper.
4. Pour the eggs over the cooked potatoes and cook for about 10 minutes over medium heat.
5. Flip the omelet with a plastic spatula to cook the other side as well.
6. Transfer the done omelet onto a plate and serve.
