Vegetarian Spanish PaellaPaella is a traditional Spanish dish, popular all over the world. It is very tasty and aromatic, let alone the benefits of green beans, peas and bell peppers.
This dish goes well with sautéed greens and fresh vegetable salad.

Serves: 4

 

Ingredients

2 tbsp extra virgin olive oil
4 cloves of garlic
½ onion, chopped
½ red bell pepper, chopped
½ Italian green pepper, chopped
2 tomatoes
½ cup frozen green beans
½ cup frozen peas
1¼ cups Basmati rice
4 cups vegetable broth or water
2 tsp turmeric powder
1 tsp sweet paprika
Salt and black pepper to taste (optional)

 

Directions

1. Add the oil to a medium saucepan and set over medium heat.
2. Add the onion, garlic, green red and pepper and cook until tender and golden brown.
3. Stir in the chopped tomatoes and cook for another 7- 10 minutes.
4. Add the frozen green beans and peas and cook additional 5 minutes.
5. Add the rice, stir-fry for 2 minutes and pour in the hot vegetable broth or water.
6. Stir in the sweet paprika, turmeric powder, season with salt and black pepper.
7. Cook the paella over medium heat for 18- 20 minutes, stirring occasionally until the rice becomes soft. Add more broth or water if needed.
8. Let the pilaf sit for at least 10 minutes, covered, before serving.
