GazpachoThis amazing cold soup originates from Spain. This is really a very interesting delicacy, which might become one of your favorites for a light lunch in summer.
Preparation time: 10 minutes
Serves: 4-6

 

Ingredients

8 ripe tomatoes
3 large garlic cloves, peeled
1 small green pepper, chopped
1 small red onion, chopped
1 small red pepper, core and seeds out, chopped
1 medium cucumber, peeled, seeded
1 long red chilli, cut
1 cup cold water
1 orange, a little zest and juice
2 tbsp apple cider or sherry vinegar
3/4 cup olive oil
1/2 tsp pepper
1 cup tomato juice
1 tsp salt

Directions

1. Place the whole tomatoes in a pot of boiling water and cook for 25-30 seconds. Then rinse in cold water and remove the skin.
2. Coarsely chop and place in a blender.
3. Peel the cucumber and remove seeds.
4. Chop the red and green peppers and throw into the blender along with cucumber, onion, chilli, tomato juice, garlic and orange zest.
5. Pulse until smooth. Add the orange juice, olive oil, vinegar, and season with salt and pepper. Pulse for another 10-15 seconds.
6. Pour the tomato soup into serving bowls, garnish with diced cucumbers, red onion and pepper and enjoy.
