Armenian Vegan Pilaf with Bulgur and Spinach

It is a healthy and tasty combination of spinach and chickpeas loaded with lots of spices. Made for family and friends – it will be sure to impress your guests!

(NOTE: bulgur is cracked and partially pre-cooked wheat)

Cooking time: 30 minutes
Serves: 6

Ingredients

1 large carrot, thinly sliced
1 cup coarse grain bulgur, washed
1 can (15.5 oz.) chickpeas, drained
1 small onion, thinly sliced
7 oz. (200 g) baby spinach, chopped
Salt and pepper to taste
5 tbsp vegetable oil

 

Directions

1. Add the vegetable oil to a medium saucepan and place over medium heat.
2. Add the onion and carrot and cook for 4-5 minutes.
3. Next, stir in the bulgur, add 3 cups of water and cook over medium-low heat until the water is absorbed in half. Then add the chickpeas, spinach, season with salt and pepper, put the lid on the saucepan and continue cooking until all the liquid is absorbed, about 30 minutes.
4. Remove from the stove, let stand for 15 minutes and enjoy.
5. Great to be served with plain yogurt.
