Thai Vegetable SaladWhat’s special about this salad recipe is how colorful and flavorful it is. The combination of so many fresh vegetables makes it an excellent choice for a healthy lunch or dinner.

Serves: 6

 

Ingredients

2 tbsp lime juice
4 tbsp sweet chilli dipping sauce
4 spring onions (cut)
A handful coriander (roughly chopped)
1 Little Gem lettuce (separated into leaves)
10 radishes (sliced)
2 carrots (cut into sticks)
1 lime zest

 

Directions

1. Start with making the dressing. In a small bowl, combine the chilli sauce, 2 tablespoons of limejuice and 1 tablespoon of lime zest.
2. In a medium salad bowl place together the radishes, onions, carrots and coriander.
3. Just before serving, drizzle the vegetables with the dressing mixture and toss to combine.
4. Place the lettuce leaves onto a serving dish, add the salad into it and serve.
