Vegetarian Thai Fried RiceWith the amazing combination of brown rice, garlic, onion, peas and soy sauce and the addition of fresh coriander,we believe this is likely to become the most adored dish on your menu!

Ingredients

2 garlic cloves, sliced
4 large eggs
1 red chili, sliced
1 tbsp dark soy sauce
2 tbsp vegetable oil
75g (2.6 oz) frozen peas
Chili sauce (optional)
1 red onion, halved, sliced
10 ½ oz (300g) brown rice, cooked
Small bunch coriander, roughly chopped

 

Directions

1. Heat 1 tablespoon of the oil in a large frying pan over medium-high heat.
2. Stir in the garlic, onion, chili, and cook, stirring constantly until onion and garlic are lightly brown, about 3 minutes.
3. Add the rice and peas and stir to combine.
4. Then add the soy sauce. In the end, sprinkle the rice with chopped coriander.
5. Meanwhile, heat the remaining 1 tablespoon of oil in a skillet, crack in the eggs and cook for a couple of minutes without stirring. Season to taste.
6. Place the fried rice into 4 serving bowls and top with 1 fried egg. Sprinkle fresh chopped coriander over and serve with chili sauce, if desired.
