Ingredients

1/2 of a pumpkin or 3 butternut squash
1/2 cup sweet red beans
1 cup soaked rice or rice cakes
6 cups of water, for pumpkin
2 cups of water, for beans
Salt

Directions

1. Place the red beans in a medium pot, add 2 cups of water and bring to a boil over medium-high heat.
2. Then wash and peel the pumpkin, chop into small cubes and transfer to a medium saucepan. Add the soaked and drained rice, water and let cook for 30 minutes over medium heat, stirring constantly.
3. When the pumpkin is very soft, add the red beans, let simmer for about 5 minutes over low heat. Season the dish with salt and remove from the heat.
4. Pour the cooked porridge into a serving bowl and serve hot.
