Healthy Carrot CurryThis is a very tasty and healthy dish that can be served with any main course. It goes well with rice and noodles and offers a very nice balance of flavors.

Ingredients

3 tbsp water
2 tbsp grape seed oil
1/2 tsp. Thai red curry paste
1-2 tbsp ginger root (finely minced)
1-2 tbsp garlic (finely minced)
1 lb (430 gr.) whole carrots
Sea salt to taste

 

Directions

1. Preheat oven to 425 °F(220 °C). Peel the carrots and cut into diagonal slices. In a small skillet heat two tablespoons of the curry paste and oil for a minute and remove from heat.
2. Next, mince the garlic and fresh ginger root.
3. Coat the baking dish with nonstick spray.
4. Place the cut carrots in the dish, top with the curry mixture, add minced garlic and ginger. Spoon the water over the dish.
5. Cover the carrots with kitchen foil and bake in the oven for about 25 minutes. Then remove the foil, slightly stir the dish and cook for another 20 minutes, until the carrots are just tender.
6. Remove the dish from the oven, season with sea salt and serve hot.
