Fasolada (Greek Bean stew)

Ingredients

1 cup white kidney beans
½ cup olive oil
1 onion, thinly sliced
2 tbsp fresh parsley, chopped
1 stalk celery, chopped
2 small carrots, sliced
1 tsp dried oregano
1 tbsp tomato paste
1 14.5oz can diced tomatoes
1 tsp dried thyme
Salt, to taste and ground black pepper, to taste

Directions

1. Soak the beans in cold water and let them stand overnight. Slightly rinse and drain in a colander.
2. Transfer the beans to a large pot. Cover with water and bring to a boil. After 3-4 minutes pour off the boiling water, add 3 cups fresh cold water and set over a medium-high heat.
3. Once the water begins to boil stir in the carrots, tomatoes, onions, tomato paste, thyme, olive oil, oregano and celery, and season with salt and pepper.
4. Let the dish simmer over low heat for about an hour until the beans are tender.
5. Finally, add the chopped parsley, give a stir and remove the soup from the heat
