Moroccan Potato PureeIf you are fond of mashed potatoes, then this Moroccan dish would serve your appetite ideally. The addition of cumin, turmeric and onion gave it an unforgettable taste.

Serves up to 30 as a side dish

Ingredients

3 tbsp olive oil, or as needed
1 onion, diced
10 large baking potatoes, peeled, cubed
1 tbsp ground turmeric
1/2 tsp ground cumin
1 tbsp salt, or to taste
2 tsp ground black pepper

Directions

1. Put the potatoes into a large saucepan; pour in enough water to cover and bring to a boil over medium-high heat.
2. Cook for about 23-25 minute, until potatoes are soft.
3. Add 1 tablespoon olive oil to a frying pan and set over medium-high heat.
4. Add the onion and sauté until golden and translucent, about 5 minutes.
5. Pour off the potato cooking liquid and mash the potatoes, add the cooked onion, cumin, turmeric, season with salt and pepper and continue mashing.
6. Add the remaining 2 tablespoons of olive oil and stir well to make creamy puree.
