Korean-Style Carrot SaladA healthy combination of carrots, garlic and onion, pecans and basil drizzled with pomegranate and orange juices is a real bouquet of flavor. This salad is a rich source of fiber and antioxidants and can be easily integrated in your healthy diet.

Ingredients

3 tbsp canola oil
1 1/2 tsp. cayenne pepper
8 medium carrots, grated
1 scallion, finely chopped
1 garlic clove, finely chopped
Salt to taste

Directions

1. Pass the carrots through a grater and place in a large salad bowl.
2. Add 3 tablespoons canola oil to skillet and set over medium heat.
3. Add the garlic to the oil, sauté for a minute, then season with salt and cayenne pepper. Give a stir and remove from the heat.
4. Make a hole in the middle of the grated carrots. Add the oil mixture into the hole. Mix the salad well to combine flavors. In the end, sprinkle with the chopped scallions.
5. Chill the salad for a couple of hours before serving.
6. Serve the salad with cooked rice or fried potatoes.
