Korean Spinach SoupPreparation time: 5 minutes

Serves: 4

Ingredients

1/2 lb (220 g) fresh spinach
1 green onion (sliced)
1 garlic clove (minced)
1 tbsp sesame oil
1 tsp soy sauce
2 tsp salt (2 to 3)
pepper (to taste)
4 cups water
2 eggs (hard boiled)

Directions

1. Wash the spinach under running cold water, removing thick stems
2. Add the sesame oil to a large saucepan and place over medium heat.
3. Add the green onion, garlic, soy sauce and fry for a few seconds. Season with salt and pepper.
4. Now, pour in 4 cups of water and add the spinach.
5. When it begins to boil, slow down the heat, put the lid on the saucepan and let simmer for about 10 minutes.
6. Let the soup sit for 10 minutes covered, before serving.
7. Garnish with hard boiled eggs (cut in half)
