French Onion SoupExperience this delicious and warming soup with onions and spices. Make sure the onions are fried well, which will add a delicate smack to the whole dish.

Cooking time: 45 minutes
Serves: 4-6

Ingredients

1 cup red wine, about 1/2 bottle
3 tbsp vegetable oil
4 onions, sliced
2 garlic cloves, chopped
1 baguette, sliced 2 bay leaves
2 fresh thyme sprigs
3 heaping tbsp all-purpose flour
8 cups vegetable stock
Kosher salt and freshly ground black pepper
1/2 lb (220 g) grated Gruyere

Directions:

1. In a saucepan, heat the vegetable oil over medium heat.
2. Add the onions, garlic, thyme, bay leaves, season with salt and pepper and cook until the onions become tender, about 25 minutes.
3. Pour in the wine and bring the mixture to a boil.
4. Reduce the heat to medium-low and let it simmer until all the wine has evaporated. Remove the thyme sprigs and bay leaves from the soup.
5. Sprinkle the flour over caramelized onions, stir and cook over low heat for 8-10 minutes.
6. Next, pour in the vegetable stock and cook for 15 minutes. Taste and adjust seasonings if needed.
7. When ready to serve the soup, place the baguette slices onto a baking sheet, sprinkle with Gruyere and broil in the oven until the cheese melts and bread slices become crispy.
8. Ladle the soup into serving bowls, add a couple of fresh prepared Gruyere croutons and serve.
