Vegetarian Shanghai Noodles
A quick and easy lunch recipe with cooked noodles, cabbage and bean sprouts. It is blended in seconds, yet provides you with a good dose of vitamins.

Serves: 4
Ingredients
2 cups cabbage shredded
1 -2 tbsp sesame oil
3 tbsp vegetable oil
1/2 cup green onion, chopped
2 -4 tbsp soy sauce or to taste
8 oz. (225 g) rice noodles
1 can bean sprouts, drained
Directions
1. Cook the noodles in a pot of boiling water following the package directions. Transfer to a colander to drain.
2. Add the oils to a frying pan, and set over medium heat. Add the onion and shredded cabbage and cook for 5 minutes.
3. Stir in the bean sprouts, noodles and soy sauce and cook until heated through, 3-4 minutes.
4. Place the noodles into a serving dish and enjoy.
5. Serve with a fresh green salad.
