Traditional Greek Potato Salad (Patatosalata)
A few simple steps and this simple and healthy salad is ready to be served. The addition of the chopped olives adds a lovely “bite” to this salad. Once you try it you will make it as often as possible.

Serves: 6
Ingredients
½ cup red onion, finely chopped
2 lbs (907g) round red potatoes
Kosher salt
1½ cups pitted Kalamata olives, roughly chopped
Freshly ground black pepper, to taste
½ cup extra virgin olive oil
3 tbsp white wine vinegar
2 tbsp flat-leaf parsley, chopped
Directions
1. Place the potatoes in a large pot and add enough water to cover. Add 1 tablespoon of salt and set over medium-high heat to boil.
2. Once boiling, reduce the heat and simmer for 12-15 minutes until the potatoes are tender. Pour off the water and cool for 15 minutes.
3. Chop the potatoes into ½ inch cubes and transfer to a large glass salad bowl.
4. Combine the vinegar, olive oil, onion and chopped olives in a small bowl, and season with salt and pepper.
5. Pour the dressing over the chopped potatoes, sprinkle with chopped parsley and gently mix to combine. This salad is perfect served warm or at room temperature
