Spicy Tofu Soup
This is a wonderful Chinese recipe. It tastes just like a tasty chicken noodle soup but with tofu. Your family will crave for more, so be ready to satisfy the appetite.

Serves: 6
Ingredients
4 cups vegetable broth
2 tsp canola oil
1 tbs brown sugar
2 tbs fresh ginger, grated
6 cloves garlic, minced
2 tsp chile-garlic sauce
4 oz.(110 g) fresh shiitake mushrooms, stemmed, sliced
8 oz. (230 g) fresh Chinese-style noodles
1/4 cup reduced-sodium soy sauce
4 cups tender bok choy greens, thinly sliced
1/2 cup fresh cilantro, chopped
14 oz. (400 g) firm tofu (preferably water-packed)
Directions
1. In a colander rinse and drain the tofu and cut into small cubes. In a large griddle, heat the oil over moderate heat. Stir in the garlic and ginger and fry for a minute, until light golden.
2. Then stir in the mushrooms and sauté for a few minutes until just tender. Also, pour in the broth, chili-garlic sauce, sugar and soy sauce, put the lid on and bring to a boil. Stir in the tofu and bok choy and let simmer for another 2-3 minutes.
3. Now increase the heat and place the noodles in the broth. Let cook for a couple of minutes, until soft. Sprinkle the soup with chopped cilantro and remove from heat. Let stand for 5-10 minutes before serving.
