Mexican Omelette
A quick and easy to make snack, which is also filling enough to make as a main if you wish!
Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 1
Ingredients
3 eggs
2 tablespoons milk
1/2 tsp parsley (optional)
1 tbsp vegetable oil
1/4 cup green pepper, chopped
1/2 cup salsa, drained
1/2 cup Monterey jack cheese, shredded
Directions
1. In a medium bowl, mix together the eggs, milk and parsley.
2. Add the oil to a small pan and set over medium heat.
3. Add the mixture to the pan and allow to cook for a couple of minutes. Gently lift the edges of the omelet so uncooked mixture can flow underneath. When the eggs are almost cooked , add the salsa, green pepper and cheese and continue cooking until the cheese melts.
4. Fold the cooked omelet in half, transfer to a serving plate and enjoy.
