Mexican Bean Salad
Combine the various kinds of beans, green and red peppers, garlic, onion and spices to make a flavorful salad. Incredibly easy to make, it is rich in proteins and other essential nutrients.

Serves: 6-8
Ingredients
1 (15 oz/450 g) can black beans, rinsed, drained
1 (15 oz. /450 g) can cannellini beans, rinsed, drained
1 green bell pepper, chopped
1 (15 oz. /450 g) can kidney beans, drained
1 red bell pepper, chopped
1 red onion, chopped
1 (10 oz. /300 g) package frozen corn kernels
1/2 cup olive oil
2 tbsp white sugar
1/2 cup red wine vinegar
2 tbsp fresh lime juice
1/2 tbsp cumin, ground
1 tbsp lemon juice
1 tbsp salt
1/2 tsp chili powder
1 clove garlic, crushed
1/4 cup fresh cilantro, chopped
1/2 tbsp ground black pepper
A dash hot pepper sauce
Directions
1. Rinse the beans drain and place in a bowl.
2. Add the frozen corn kernels, chopped onion and bell peppers.
3. Add the lime juice, garlic, olive oil, red wine vinegar, salt, sugar, cumin, cilantro, and black pepper to a small bowl.
4. Add a dash of hot sauce and chili powder to taste and stir to combine.
5. Pour the dressing over bean mixture and stir well to combine.
6. Refrigerate for at least an hour before serving.
