Korean Sautéed Spinach
This makes for a healthy dish and is quick to assemble. And it is made of ingredients that are always on hand. Don’t skip the soy sauce because it is the key ingredient in this dish.

Cooking time: 15 minutes
Serves: 4-6
Ingredients
2 lbs (900 g) fresh spinach (coarsely chopped)
3 tbsp vegetable oil
1 tbsp sesame seeds (toasted) OR toasted pinenuts
Sauce
3 tbsp soy sauce
3 tbsp vinegar
2 tbsp dark sesame oil
Directions
1. Add the vegetable oil to a large sauté pan and heat over medium heat.
2. Add the chopped spinach to the pan and cook until wilts, stirring frequently.
3. Meanwhile, make the sauce by combining the sesame oil, soy sauce and vinegar in a small cup.
4. Once the greens are cooked, remove the excess liquid.
5. Spoon the prepared sauce over the spinach, toss to coat. Garnish the greens with sesame seeds (or pine nuts) and serve.
