Kartoffelpuffer (German Potato Pancakes)
I am sure these potato pancakes will quickly become your favorite. Hot, warm or cool, they are always absolutely delicious. Just make them and enjoy.

Cook time: 10 minutes
Serves: 4
Ingredients
1 onion, grated
2 eggs, beaten
3/4-1 tsp salt or to taste
Ground pepper to taste
1 lb (450 g) potatoes, grated
Freshly ground nutmeg
1-2 tbsp flour
Oil (for frying)
Directions
1. Peel the potatoes and onion and pass through a grater. Mix in the eggs, flour, salt, pepper and nutmeg.
2. Add the oil to a skillet and set over medium heat.
3. Drop about 1/2 cup potato mixture into the hot skillet for each pancake. Using the back of a spoon, lightly flatten the top and cook for about 3-4 minutes per side.
4. Flip to brown the other side as well.
5. Transfer the done pancakes onto a plate lined with a kitchen towel.
6. Great to be served warm along with applesauce.
