Crunchy Kraut SaladThis incredibly quick and easy salad with sauerkraut, green pepper, onion and celery can be served as a side dish for fried or mashed potatoes. It is also very rich in fiber and essential amino acids.
Preparation time: 5 minutes+ chilling
Cooking time: 2 minutes
Serves: 2-3

Ingredients

1 can (14 ounces) sauerkraut, rinsed, drained
1/4 cup white vinegar
1/2 cup celery, chopped
1/4 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup sugar
1/2 tsp celery seed

Directions

1. Rinse the sauerkraut, drain well and place in a medium salad bowl.
2. Add the celery, green pepper and onion.
3. Add the sugar and vinegar to a small saucepan and set over medium-high heat. Cook for 1-3 minutes, stirring constantly until the sugar is dissolved.
4. Remove from the heat. When the mixture has slightly cooled, pour over the sauerkraut mixture.
5. Finally, add the celery seeds and mix well to combine
6. Chill the salad for at least 1 hour.
7. Serve the salad with mashed potatoes or chickpeas.
