Baked Cheesy Tomatoes
Here is a quick and easy recipe of Italian-style sliced and baked tomatoes stuffed with a cheesy, spicy mixture. Serve with crusty bread or tortilla chips.

Ingredients
3 tbsp parsley, chopped
1/2 cup breadcrumbs
4 medium-size tomatoes
1/2 cup parmesan cheese
1 small onion, finely chopped
3 tbsp olive oil, melted
2 tbsp chives, chopped
1 tsp tarragon
1tsp pepper
Directions
1. Place bread crumbs, parmesan cheese, chives, parsley and tarragon in a medium bowl, season with pepper.
2. Add onion and olive oil. Mix to combine.
3. Cut tomatoes in half (horizontally) and remove the seeds.
4. Preheat the oven 350 °F (180 °C). Coat the baking dish with cooking spray.
5. Fill the tomatoes with breadcrumbs mixture and bake in the oven for about 10 minutes.
6. Let the dish stand for at least 5 minutes before serving.
