Cauliflower Au Gratin
Every vegetarian will appreciate this low calorie dish with cauliflower, flavored with garlic, fresh parsley and rosemary. It can be served with sautéed greens as a delicious and healthy lunch or dinner.

Ingredients
1 lb (450 g) cauliflower florets, cut into small pieces
1 1/2 tsp chopped fresh rosemary
1 tbsp drained capers
4 garlic cloves, sliced
1 cup cheese and breadcrumb mix
1/4 tsp red pepper flakes
1/8 tsp black pepper
2 tbsp fresh Italian parsley, divided, chopped
Directions
1. Preheat the broiler.
2. Add the oil to a large saucepan and set over medium-high heat. Stir in the garlic, red pepper flakes, capers, rosemary, and 1 tablespoon of the parsley, season with black pepper and sauté for 2-3 minutes, until the garlic turns golden.
3. Add the cauliflower and toss to coat. Sauté for 2 minutes, until the cauliflower turns becomes golden brown on all sides.
4. Remove the cauliflower mixture from the pan and transfer to a medium oven roof pan. In a small bowl, combine the cheese and bread crumbs.
5. Sprinkle the cheese mixture over the cauliflower and broil for 5-6 minutes, until the cheese melts and becomes lightly golden.
6. Garnish with the remaining parsley and serve.
