Moroccan Lentil SaladA very tasty and aromatic salad let alone the benefits of cooked lentils, chickpeas and fresh vegetables. It is also a rich source of protein and fiber. Serve over steamed brown rice.

Serves 5

Ingredients

1/2 cup dry lentils
2 tomatoes, chopped
1 1/2 cups water
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 (15 ounce) can chickpeas, drained
4 green onions, chopped
2 tbsp olive oil
2 hot green chili peppers, minced
1/2 yellow bell pepper, chopped
1 lime, juiced
1/4 cup fresh cilantro, chopped
Salt to taste

Directions

1. Add lentils to a medium saucepan, pour in the water and set over medium-high heat.
2. Once boiling, slow down the heat and let simmer, until soft, about 30 minutes.
3. Place the cooked lentils, green onions, tomatoes, chickpeas, bell peppers, green chilies in a medium salad bowl, add the olive oil, lime juice and chopped cilantro.
4. Season the salad with salt to taste and mix well to combine.
5. Refrigerate for 30 minutes before serving.
